I found an interesting one on iDrink, but only if you like cinnamon and don't have some horrible tequila story, after which you swore the stuff off forever.
Ingredients: 1 tbsp Cinnamon, 1/2 oz. Coconut Cream, 2oz. Orange juice, 1oz. Tequila.
Directions: Combine all ingredients in a cocktail shaker half-filled with ice cubes. Shake well, and pour into a cocktail glass. Dust with cinnamon, and serve.

I like my vodka in martini form, but I can understand that's not everyone's favorite. Even if that does make them uncivilized heathens.
I ran across this at DrinkNation and thought it sounded interesting. It's not really a drink, and does take some time, but with some experimenting it might make some interesting flavored vodka.
Ingredients: 1 pint of vodka, 2 packages of starbursts (yes, the candy).
Directions: Add the vodka and starbursts, or other candy, to a jar and then cover it with a lid. The infusion will take approximately 2-3 days depending upon the kind of candy used and shaking will make it break down faster. When the candy is fully dissolved, you may have to strain it through a fine mesh strainer to get out the nasty stuff floating on top. Drink it straight over ice, as a shot, or mix with 7-up.

This one is a traditional Swedish holiday drink, and probably not the easiest to make. It can be found on KingCocktail, and makes six servings.
Ingredients: 1 bottle of full bodied red wine, 1/3 cup raisins, 1/3 cup blanched almonds, 5 crushed Cardamom, 5 whole cloves, 1 cinnamon stick, 1 peel of a small orange (yellow part orange), *4 oz. vodka, sugar (to taste).
Directions: Mix together wine, raisins, almonds and spices. In a closed container, let the mixture stand in a closed container at room temperature for 24 hours. Before serving, heat the mixture and add vodka and sugar. Serve hot with a few raisins and blanched almonds in each cup. (Some recipes use cognac in place of vodka).
(Swedish drinking songs not included)
